Easy Spicy Corn Salsa



  • 1 pound frozen corn, thawed
  • 1/2 cup small diced red peppers
  • 1/4 cup small diced red onions
  • 1/4 cup small diced jalapeno
  • 1/4 cup chopped cilantro
  • 1 TBSP fresh squeezed lime juice
  • 2 TBSP olive oil
  • 1/4 tsp granulated garlic
  • 1/2 tsp kosher salt
  • Pinch of black pepper


  • Rinse the corn under cold running water thoroughly, for about 1 minute. Then drain the corn well while preparing the rest of the ingredients.
  • In a large mixing bowl combine the red peppers, red onions, jalapenos, cilantro, lime juice, olive oil, granulated garlic, salt and pepper and stir.
  • Once the corn is well drained add it to the bowl and stir together. Taste and season with additional salt & pepper to taste.
  • Serve immediately or cover and refrigerate for later use.
