Apple Pie Baked Oatmeal

Ingredients:

  • 1 large egg
  • ¼ cup brown sugar (or 3 tablespoons maple syrup)
  • ¼ cup (60ml) melted butter, cooled
  • 1½ teaspoons apple pie spice (or 1¼ teaspoons cinnamon + ¼ teaspoon nutmeg + 1/8 teaspoon allspice)
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 2 cups (480ml) milk
  • 2 cups (200gms) large-flake old-fashioned rolled oats
  • 2 large Washington Organic apples

Directions:

  • Preheat the oven to 375°F (190°C). Butter an 8″ or 9″ square baking dish (20 or 23 cm square) or a 2 quart/litre casserole dish.
  • In a large bowl, whisk the egg with the brown sugar and melted butter. Add the spice, baking powder, salt, and milk. Sitr in the rolled oats.
  • Cut the apples in quarters and cut out the core. Leave the peel on, and dice the apples. Add them to the oat mixture and stir to combine everything well. The mixture will be quite liquid.
  • Pour the apple/oat mixture into the greased pan.
  • Bake for 35 to 40 minutes. (An 9-inch pan will take 35 minutes and an 8-inch pan will take 40 minutes, since the mixture is thicker.)
  • Serve warm by cutting into squares or scooping out portions with a serving spoon.
  • Serve with maple syrup or brown sugar, cream or yogurt, and fresh apple slices, if desired. Can be covered and refrigerated for up to 5 days.
  • Individual portions can be reheated as needed, either in the microwave, or covered with foil and baked in the oven for 10 to 15 minutes.
